Coconut and Chocolate Loaf

During the winter months baking is a favorite activity in Dr Phatouros’ household and this Coconut and Chocolate Loaf is a winner with the whole family.

Ingredients

2 ¼ cups plain flour

2 teaspoons baking powder

½ cup caster sugar

1 ¼ cups unsweetened desiccated coconut

250g unsalted butter, melted, plus extra for greasing

1 cup milk

2 eggs, lightly beaten

1 teaspoon vanilla bean paste

65g chocolate, roughly chopped

 Method

Preheat the oven to 180 degrees Celsius.

Combine the flour, baking powder, sugar and coconut in a large bowl, add in the butter, milk and vanilla bean paste and mix well until all combined. Add in the chocolate to the mix and stir well.

Pour mixture into a greased 25cm loaf pan.

Bake in the oven for 1 hour.

Allow to cool in the tin for 10 minutes after taking loaf out of the oven and before turning out to wire racks to cool.

Enjoy with a nice warm cup of tea or hot chocolate for a delicious winter treat.
